Premium English Breakfast

Black teas like our Premium English Breakfast are fully oxidised, making them able to handle near-boiling temperatures without bitterness. The high heat extracts the rich, bold flavours and intense colour.

Brewing too cool, the tea will taste weak and lack its signature strength.

Brewing too hot, or over steeping, can make the tea have a dryness on the palette.

French Earl Grey

Black tea infused with delicate bergamot oil, orange, and floral notes, needs consideration and patience to preserve its citrusy aroma and floral notes.

Steeping at the recommended temperature ensures a delightful balance of the robust tea with the delicate tones.

Steeping too cool will prevent the oils from singing. The tea may taste flat, and the
aromatic oils won’t shine.

Luxurious Aromatic Chai

Spices like cinnamon, cardamom, and cloves need higher temperatures to release their
properties and give you the full spiced tea experience.  Boiling water extracts the full depth of flavour from both the tea leaves and the spices, creating a rich and aromatic cup.

Brew too cool and the spices and tea won’t release their full potency, resulting in a loss of flavour.

Recommended temperature is 100°C

Steep for 5 - 10 mins (Longer if boiling in milk)

Sencha Green Tea

Green teas like Sencha are minimally oxidised and have delicate leaves. A lower temperature prevents them from releasing too many tannins, which can make the tea taste bitter. This ensures a fresh, slightly sweet flavour with grassy, umami notes.

Brew too hot and the tea can become bitter and overly astringent.

Too cool and the tea may taste weak, as the flavour compounds won’t fully infuse.

Steep for 2 - 5 mins

Berry Orchard Tisane

Herbal infusions like Berry Orchard Tisane don’t contain tea leaves, so they lack tannins
and won’t become bitter at high temperatures. Whilst this can be cold-brewed, boiling water will fully release the flavours of dried fruits, flowers, and
herbs. Try steeping longer for an even fuller flavour.

If too cool, the flavours may remain subdued, resulting in a weak infusion.

Blue Butterfly Pea Tisane

Blue Butterfly Pea Tisane is a stunning, caffeine-free herbal infusion known for its vibrant blue hue and its magical colour change when acid is added.

Ideally the colour should be light bright, and somewhat clear. Ideally 3 – 5 buds per 250ml is plenty.

Hot brew will release the flavour and colour faster, but it can be cold brewed as well. Think a few buds in your drink bottle and keep topping up through the day.

Recommended temperature 95°C

Steep for 5–7 minutes. This duration is ideal to fully release the pigments (anthocyanins)
without over-extracting, which can lead to a slightly bitter taste.
